Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoon olive oil
- 3 cup broccoli florets
- 3–4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup low-sodium chicken broth
- 1/2 teaspoon dried thyme or Italian seasoning
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper to taste
Instructions
1. Start by seasoning the chicken breasts with salt and freshly ground black pepper.
2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken until it’s golden and cooked through, about 5–7 minutes per side. Remove the chicken from the skillet and set it aside.
3. Add the broccoli florets to the same skillet and sauté them until they’re bright green and slightly tender, about 3–4 minutes. Toss in the minced garlic and cook for 1 minute more.
4. Reduce the heat to medium and stir in the heavy cream, chicken broth, thyme, Parmesan cheese, lemon juice, and optional lemon zest. Let the sauce simmer until it thickens, about 3–5 minutes.
5. Return the seared chicken to the skillet, spooning the creamy sauce over the top. Serve the Creamy Chicken and Broccoli warm, with the sauce spooned over the chicken and broccoli.
