- 1 pound boneless skinless chicken breast
- 2 tablespoon olive oil
- 2 tablespoon butter
- 3 cloves garlic
- 1 packet ranch seasoning mix
- 1 cup low sodium chicken broth
- 1 cup heavy cream
- 8 ounce cream cheese
- 4 slices bacon
- 1 pound potato gnocchi
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley
Instructions
- Heat the olive oil and butter in a large skillet or pot over medium heat. Add the diced chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
- Stir in the minced garlic and cook for 30 seconds, until fragrant.
- Add the ranch seasoning, chicken broth, and heavy cream to the skillet. Bring the mixture to a simmer, then stir in the softened cream cheese until it’s melted and the sauce is smooth.
- Add the potato gnocchi to the sauce and cook for 3-5 minutes, until the gnocchi is tender and floats to the top.
- Stir in the crumbled bacon and shredded cheddar cheese until the cheese is melted and everything is well combined. Season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot.
