Description

Creamy Crack Chicken Gnocchi is a creamy, cheesy, and indulgent comfort food dish featuring tender chicken, pillowy-soft gnocchi, and a rich sauce.


Ingredients

  • 1 pound boneless skinless chicken breast
  • 2 tablespoon olive oil
  • 2 tablespoon butter
  • 3 cloves garlic
  • 1 packet ranch seasoning mix
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream
  • 8 ounce cream cheese
  • 4 slices bacon
  • 1 pound potato gnocchi
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley

Instructions

  1. Heat the olive oil and butter in a large skillet or pot over medium heat. Add the diced chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  2. Stir in the minced garlic and cook for 30 seconds, until fragrant.
  3. Add the ranch seasoning, chicken broth, and heavy cream to the skillet. Bring the mixture to a simmer, then stir in the softened cream cheese until it’s melted and the sauce is smooth.
  4. Add the potato gnocchi to the sauce and cook for 3-5 minutes, until the gnocchi is tender and floats to the top.
  5. Stir in the crumbled bacon and shredded cheddar cheese until the cheese is melted and everything is well combined. Season with salt and pepper to taste.
  6. Garnish with fresh parsley and serve hot.
