- 1 lb Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup low sodium chicken broth
- 1 lb cheese tortellini
- 1 cup baby spinach leaves
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Red pepper flakes, optional
- Fresh parsley, chopped, for garnish
Instructions
- In a large skillet over medium heat, heat the olive oil and brown the Italian sausage, breaking it into small pieces. Cook for 5-7 minutes until no longer pink. Remove the sausage from the skillet and set it aside.
- In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional 1 minute.
- Pour in the chicken broth and heavy cream, stir, and bring the mixture to a simmer.
- Add the tortellini to the simmering sauce and cook according to the package instructions, usually around 5-7 minutes, stirring occasionally.
- Return the cooked sausage to the skillet. Add the baby spinach and stir until it’s wilted. Stir in the grated Parmesan cheese until the sauce is creamy and the cheese is melted. Season with salt, pepper, and optional red pepper flakes to taste.
- Garnish with chopped fresh parsley and additional Parmesan cheese, if desired. Serve hot and enjoy!
