  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (14.5 ounce) diced tomatoes
  • 4 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cup fresh spinach (or kale)
  • 1 cup small pasta (like medium shells or ditalini)
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

1. In a large pot or Dutch oven, cook the ground chicken over medium heat until it’s browned and cooked through, about 5-7 minutes. Remove the cooked chicken from the pot and set it aside.

2. In the same pot, sauté the onion, garlic, carrots, and celery until they’re softened, about 5-7 minutes.

3. Stir in the diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.

4. Reduce the heat to low and let the soup simmer for 10 minutes, allowing the flavors to meld together.

5. Stir in the pasta and spinach (or kale), and continue to cook until the pasta is tender, about 8-10 minutes.

6. Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Heat through, stirring occasionally, until the cheese is melted and the soup is creamy and hot.

7. Ladle the soup into bowls and garnish with fresh basil leaves. Serve it warm and savor every delicious spoonful!

Notes
