Description

Indulge in the Cozy Comfort of Creamy Lasagna Soup. This comforting dish combines all the beloved elements of lasagna – ground beef, pasta, creamy cheese, and robust tomato sauce – in an easy-to-make soup form.

Ingredients

Scale
  • 2 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoon tomato paste
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • 24 ounce tomato basil pasta sauce
  • 14.5 ounce canned diced tomatoes
  • 4 cup chicken broth
  • 8 ounce lasagna noodles, broken into 2-inch pieces
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Toppings: 1 cup ricotta cheese, 1 cup shredded mozzarella, 1/2 cup grated Parmesan, fresh basil

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat if needed.
  2. Add the diced onion to the pot and cook for 3-4 minutes, until softened. Stir in the minced garlic, tomato paste, red pepper flakes, oregano, and Italian seasoning. Cook for 1-2 minutes, allowing the flavors to bloom.
  3. Pour in the tomato basil pasta sauce, canned diced tomatoes, and chicken broth. Season with salt and black pepper to taste. Bring the mixture to a boil.
  4. Add the broken lasagna noodles to the pot. Reduce the heat to medium-low and simmer for 12-15 minutes, stirring occasionally, until the noodles are tender.
  5. Stir in the heavy cream and let it heat through for 2-3 minutes, blending the flavors together.
  6. Ladle the Creamy Lasagna Soup into bowls and top each serving with a dollop of ricotta cheese, shredded mozzarella, grated Parmesan, and fresh chopped basil.

Notes

Adjust the spice level by reducing or omitting red pepper flakes for a milder soup. You can incorporate veggies like bell peppers or mushrooms for extra nutrition. For gluten-free options, use gluten-free lasagna noodles or zucchini noodles. A dairy-free version can be made with non-dairy milk and cheese alternatives.
