Ingredients
Scale
- 2 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoon tomato paste
- 1/4 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 1 teaspoon Italian seasoning
- 24 ounce tomato basil pasta sauce
- 14.5 ounce canned diced tomatoes
- 4 cup chicken broth
- 8 ounce lasagna noodles, broken into 2-inch pieces
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Toppings: 1 cup ricotta cheese, 1 cup shredded mozzarella, 1/2 cup grated Parmesan, fresh basil
Instructions
- Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat if needed.
- Add the diced onion to the pot and cook for 3-4 minutes, until softened. Stir in the minced garlic, tomato paste, red pepper flakes, oregano, and Italian seasoning. Cook for 1-2 minutes, allowing the flavors to bloom.
- Pour in the tomato basil pasta sauce, canned diced tomatoes, and chicken broth. Season with salt and black pepper to taste. Bring the mixture to a boil.
- Add the broken lasagna noodles to the pot. Reduce the heat to medium-low and simmer for 12-15 minutes, stirring occasionally, until the noodles are tender.
- Stir in the heavy cream and let it heat through for 2-3 minutes, blending the flavors together.
- Ladle the Creamy Lasagna Soup into bowls and top each serving with a dollop of ricotta cheese, shredded mozzarella, grated Parmesan, and fresh chopped basil.
Notes
Adjust the spice level by reducing or omitting red pepper flakes for a milder soup. You can incorporate veggies like bell peppers or mushrooms for extra nutrition. For gluten-free options, use gluten-free lasagna noodles or zucchini noodles. A dairy-free version can be made with non-dairy milk and cheese alternatives.
