Creamy Miso Udon is a delightful and indulgent twist on classic Japanese udon noodles. This rich, velvety dish combines the savory umami flavors of miso paste with the luxurious creaminess of heavy cream or evaporated milk, creating a truly comforting and satisfying meal.

  • 8 ounce udon noodles
  • 2 tablespoon butter
  • 2 cloves garlic, minced
  • 1 medium onion, sliced
  • 8 ounce mushrooms, sliced
  • 2 tablespoon oyster sauce or soy sauce
  • 1 cup heavy cream or evaporated milk
  • 3 tablespoon miso paste
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Garnishes: chopped green onions, furikake, shredded nori, soft-boiled egg

Instructions

  1. If using frozen udon noodles, soak them in hot water for about 1 minute to loosen them up. Use chopsticks to gently separate the noodles, then rinse them with cold water and set them aside.
  2. In a large pan or skillet, melt the butter over medium heat until it’s completely melted and bubbling.
  3. Add the sliced onion and minced garlic to the melted butter. Sauté for about 2 minutes, or until the garlic is golden brown and fragrant.
  4. Stir in the mushrooms of your choice. Add a few tablespoon of water and the oyster sauce or soy sauce to the pan. Sauté the mushrooms for a few minutes, until they have released their moisture and are cooked through.
  5. Pour in the heavy cream or evaporated milk and whisk in the miso paste, making sure it’s fully dissolved. Bring the sauce to a gentle simmer.
  6. Add the drained udon noodles to the pan and toss them until they’re evenly coated in the creamy miso sauce. Season with salt and pepper to taste.
  7. Transfer the Creamy Miso Udon to serving bowls and garnish with chopped green onions, furikake, shredded nori, and a soft-boiled egg, if desired.

Notes

For best results, use frozen udon noodles for superior texture.
