Ingredients
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 2 tablespoon olive oil
- 2 tablespoon butter
- 8 ounce mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped
Instructions
1. In a large bowl, combine the ground chicken, breadcrumbs, egg, Parmesan, minced garlic, salt, pepper, and thyme. Mix gently with your hands until just combined.
2. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until golden brown on all sides, about 6-8 minutes. Remove the meatballs from the skillet and set aside.
3. In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté until golden and tender, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.
4. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste.
5. Return the seared meatballs to the skillet, reduce heat to low, and let simmer in the sauce for 10 minutes.
