- 2 tablespoon olive oil
- 8 ounce sliced mushrooms
- 1 cup heavy cream
- 1 cup shredded Swiss cheese
- 2 cloves minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth
- 1/4 cup fresh parsley
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper, then sear them for 4-5 minutes on each side until they’re golden brown. Remove the pork chops from the skillet and set them aside.
- In the same skillet, add the sliced mushrooms and sauté them until they’re browned, about 5 minutes. Add the minced garlic and dried thyme, and cook for an additional minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer and let it cook for 3-4 minutes, stirring occasionally, until the sauce has slightly thickened.
- Stir in the shredded Swiss cheese until it’s melted and the sauce is smooth. Return the pork chops to the skillet, making sure they’re coated in the creamy mushroom sauce. Simmer for another 5 minutes.
- Plate the pork chops and generously spoon the mushroom sauce over the top. Garnish with fresh chopped parsley before serving.
