Creamy Street Corn Pasta Salad is a delightful summer dish that combines the best of both worlds – the bold, charred flavors of Mexican street corn and the refreshing creaminess of a pasta salad.

- 8 ounce rotini or penne pasta
- 3 cup fresh or frozen corn kernels
- 1 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoon lime juice
- 1/2 cup crumbled cotija cheese
- 1/4 cup chopped fresh cilantro
- 1/2 cup diced red onion
- 1 teaspoon chili powder
- Salt and black pepper to taste
Instructions
- Cook the pasta according to the package instructions, being careful not to overcook it. Drain the pasta and rinse it under cold water.
- Prepare the corn by grilling or charring fresh corn kernels, or thawing and drying frozen corn.
- In a large bowl, whisk together the mayonnaise, sour cream, and lime juice until well combined.
- Fold in the cooked pasta, charred corn kernels, crumbled cotija cheese, chopped cilantro, diced red onion, and chili powder. Season with salt and black pepper to taste.
- Cover the salad and chill it in the refrigerator for at least 30 minutes, or up to 24 hours.
Notes
For a heartier meal, top the salad with grilled chicken, shrimp, or black beans.
Serve chilled or at room temperature alongside grilled meats or as a standalone lunch.
