Description
Creamy Tuscan Garlic Tortellini Soup is a comforting, flavor-packed dish that combines cheese-filled tortellini, sun-dried tomatoes, and fresh spinach in a creamy, garlicky broth.
Ingredients
- 1 package (9-12 ounce) cheese tortellini
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cup baby spinach
- 1 cup heavy cream
- 4 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
2. Pour in the chicken broth and stir in the chopped sun-dried tomatoes. Bring the mixture to a gentle simmer.
3. Add the cheese tortellini to the pot and cook according to the package instructions, usually around 7-9 minutes, until the pasta is tender.
4. Stir in the heavy cream and the baby spinach. Cook for an additional 2-3 minutes, until the spinach has wilted.
5. Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
6. Ladle the soup into bowls and enjoy.
