Creamy Tuscan Mushroom Pasta Skillet is a decadent dish featuring tender pasta in a luscious, garlic-infused cream sauce with sautéed mushrooms and sun-dried tomatoes.

- 12 ounce pasta (penne, rigatoni, or fettuccine)
- 2 tablespoon olive oil
- 1 pound mushrooms, sliced (cremini or button)
- 1 small onion, diced
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup vegetable broth (or chicken broth)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cup baby spinach
Instructions
- Cook pasta according to package instructions until al dente. Reserve some pasta cooking water.
- In a large skillet, heat olive oil over medium heat. Add mushrooms and sauté until browned.
- Add diced onion and minced garlic to the skillet, cooking until fragrant and translucent.
- Stir in salt, black pepper, Italian seasoning, sun-dried tomatoes, and vegetable broth. Simmer for a few minutes.
- Reduce heat and add heavy cream and Parmesan cheese, stirring until combined and heated through.
- Add cooked pasta and baby spinach to the skillet, tossing to combine. Adjust seasoning as needed.
- Serve hot, garnished with additional Parmesan cheese and fresh basil if desired.
Notes
Optional: Add red pepper flakes for heat or grilled chicken for protein.
