Description

Creamy Tuscan Mushroom Pasta Skillet is a decadent dish featuring tender pasta in a luscious, garlic-infused cream sauce with sautéed mushrooms and sun-dried tomatoes.


Ingredients

  • 12 ounce pasta (penne, rigatoni, or fettuccine)
  • 2 tablespoon olive oil
  • 1 pound mushrooms, sliced (cremini or button)
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup vegetable broth (or chicken broth)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cup baby spinach

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve some pasta cooking water.
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms and sauté until browned.
  3. Add diced onion and minced garlic to the skillet, cooking until fragrant and translucent.
  4. Stir in salt, black pepper, Italian seasoning, sun-dried tomatoes, and vegetable broth. Simmer for a few minutes.
  5. Reduce heat and add heavy cream and Parmesan cheese, stirring until combined and heated through.
  6. Add cooked pasta and baby spinach to the skillet, tossing to combine. Adjust seasoning as needed.
  7. Serve hot, garnished with additional Parmesan cheese and fresh basil if desired.

Notes

Optional: Add red pepper flakes for heat or grilled chicken for protein.
