  • 2 pound boneless skinless chicken breasts
  • 2 tablespoon teriyaki sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon low sodium soy sauce
  • 2 teaspoon fresh garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 bag coleslaw mix
  • 1/4 cup green onions, diced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon honey
  • 16 wonton wrappers
  • Olive oil or cooking spray
  • Sweet chili sauce
  • Sesame seeds
  • Fresh cilantro, chopped

Instructions

  1. Slice the chicken breasts into thin strips and toss them in a medium bowl with the teriyaki sauce, sesame oil, soy sauce, garlic, and ginger. Cover and refrigerate for at least 1 hour.
  2. Preheat your oven to 375°F. Turn a muffin tin upside down and press the center of each wonton wrapper between two muffin cup to create a V-shaped shell. Brush the wonton wrappers lightly with olive oil or cooking spray. Bake for 7-9 minutes until golden brown and crispy.
  3. Heat a large skillet over medium heat and add a bit of olive oil. Remove the marinated chicken from the fridge and sauté it in the skillet until cooked through and no longer pink. Remove from heat and set aside.
  4. In a large bowl, combine the coleslaw mix with the chopped green onions. In a separate bowl, whisk together the sesame oil, rice vinegar, soy sauce, and honey to make the dressing. Pour the dressing over the coleslaw mixture and toss to coat evenly.
  5. Assemble the tacos by adding a small amount of cooked chicken into each crispy wonton shell. Top with a generous helping of Asian slaw, drizzle with sweet chili sauce, and sprinkle with sesame seeds and fresh chopped cilantro.
