Description

  • 1 pound boneless chicken breast, cut into thin strips
  • 2 tablespoon dark soy sauce
  • 1 teaspoon garlic and ginger paste
  • 1 teaspoon sesame oil
  • 1 teaspoon white pepper
  • 1 tablespoon sugar
  • 1 egg white
  • 1 cup cornflour (cornstarch)
  • Vegetable oil for frying
  • 23 spring onions, chopped (for garnish)

Instructions

1. To begin, marinate the chicken strips in the soy sauce, garlic, ginger, sesame oil, white pepper, and sugar. Allow the chicken to sit for at least 10 minutes.

2. Next, add the egg white and mix well, followed by the cornflour. Ensure that each piece of chicken is evenly coated for maximum crispiness.

3. Heat the vegetable oil in a wok or frying pan to 350°F. Fry the chicken in batches for 1-2 minutes until lightly golden. Remove the chicken and set it aside. Then, return the chicken to the hot oil and fry again for 2-3 minutes, until crispy and golden brown. Drain the chicken on paper towels to remove any excess oil.

4. To create the perfect balance of sweet, sour, and spicy, combine 3 tablespoon honey, 1 tablespoon lemon juice, 2 tablespoon dark soy sauce, and 1-2 tablespoon sriracha in a small bowl.

5. In a clean wok or pan, heat the sauce until it starts to bubble. Add the crispy chicken and toss to coat the pieces evenly.


Notes

To serve, sprinkle the chopped spring onions over the Crispy Chilli Chicken and enjoy it hot, either on its own or with a side of steamed rice or noodles.
