Ingredients
- 1/2 cup lemon juice
- 2 tablespoon extra-virgin olive oil
- 1 pound baby spinach
- 8 ounce Greek feta cheese, crumbled
- 1 pound gnocchi
- 2 tablespoon extra-virgin olive oil
- 1/4 teaspoon crushed red pepper
- 1/4 cup scallions, sliced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 teaspoon salt
Instructions
1. Place the baby spinach into a large bowl. Add half of the crumbled feta, the juice of 1/2 lemon, 1 tablespoon of olive oil, and a pinch of salt. Rub the ingredients into the spinach to tenderize it, then set aside.
2. Heat a large (12-inch) cast-iron or nonstick skillet over medium-high heat. Add 2 tablespoon of olive oil.
3. Add the gnocchi to the hot pan, breaking up any that are stuck together. Cook for 8-10 minutes, tossing every 2 minutes, until the gnocchi are golden brown and crispy all over.
4. Remove the pan from the heat and allow the gnocchi to cool for 5 minutes, which will help them crisp up further.
5. Add the crispy gnocchi to the bowl with the spinach. Top with the remaining feta, the crushed red pepper, sliced scallions, chopped dill, and chopped mint.
6. Drizzle the remaining 2 tablespoon of olive oil over the top and toss everything together to combine.
7. Squeeze the remaining lemon juice over the dish and serve immediately.
Notes
For variations, consider using kale or arugula instead of spinach, or experiment with different cheeses like ricotta or goat cheese. You can also add grilled chicken or sautéed shrimp for added protein.
