Ingredients
- 2 pound beef stew meat
- 1 ounce dry onion soup mix
- 2 cup beef broth
- 3 tablespoon ketchup
- 1 tablespoon Worcestershire sauce
- 3 tablespoon cornstarch
- 3 tablespoon minced garlic
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Instructions
1. Season the beef stew meat lightly with salt and pepper.
2. Place the seasoned beef in the slow cooker, then add the onion soup mix, beef broth, ketchup, Worcestershire sauce, garlic, and thyme. Stir everything together until well combined.
3. Cover the slow cooker and cook the beef tips on low for 7-8 hours or on high for 4-5 hours, until the meat is fork-tender.
4. In a small bowl, whisk together the cornstarch and 3 tablespoon of cold water to create a slurry. Stir the slurry into the crock pot during the last 30 minutes of cooking to thicken the gravy.
5. Spoon the Crock Pot Beef Tips and Gravy over mashed potatoes, rice, or egg noodles for a hearty meal.
Notes
For extra flavor and nutrition, consider adding diced carrots, potatoes, or mushrooms to the crock pot during the last 2 hours of cooking.
