Description

Crock Pot Chicken and Stuffing Dinner is a comforting slow-cooked meal featuring tender chicken, flavorful stuffing, and creamy sauce.

Ingredients

Scale
  • 4 pieces boneless, skinless chicken breasts
  • 1 box (about 6 ounce) stuffing mix
  • 1 can (10.5 ounce) cream of chicken soup
  • 2/3 cup milk
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1/2 cup frozen peas or mixed veggies (optional)
  • Pinch of black pepper
  • Pinch of garlic powder
  • Pinch of thyme

Instructions

1. Spray the Crock Pot with nonstick cooking spray to prevent sticking.

2. Layer the chicken breasts at the bottom of the Crock Pot. If using frozen chicken, they’ll take a bit longer to cook through.

3. In a bowl, whisk together the cream of chicken soup, milk, chicken broth, and sour cream until smooth.

4. Pour the soup mixture over the chicken in the Crock Pot.

5. Sprinkle the stuffing mix on top of the chicken and soup mixture. Gently press down with a fork if needed.

6. If using, add the frozen peas or mixed veggies and sprinkle with black pepper, garlic powder, and thyme.

7. Cover the Crock Pot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the stuffing is tender.

8. Once the cooking is done, fluff the stuffing with a fork. If desired, you can broil the dish for a few minutes to crisp up the top of the stuffing.

9. Serve and enjoy this comforting Crock Pot Chicken and Stuffing Dinner!

Notes

Adjust Cooking Time for Frozen Chicken: If using frozen chicken breasts, add an extra 30 minutes to the cooking time to ensure they’re cooked through.

Achieve Optimal Flavor: For the best flavor, use high-quality ingredients like a good-quality stuffing mix and creamy sour cream or Greek yogurt.

Pair It with Tasty Sides: This dish pairs wonderfully with a fresh salad, warm bread, or steamed vegetables for a complete meal.

Enjoy Leftovers: This dish is even better the next day. Leftovers can be reheated in the microwave or oven for a quick lunch or dinner.

Experiment with Variations: Try adding different herbs or spices to the stuffing mix, or substitute the frozen veggies with your favorite options.
