Description

Crockpot Breakfast Tacos are a flavor-packed, fuss-free way to start your day, combining savory sausage, fluffy eggs, and melty cheese in warm tortillas.

Ingredients

Scale
  • 1 pound breakfast sausage
  • 4 large eggs
  • 1/4 cup milk
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 cup shredded cheese
  • 8 tortillas

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Layer the cooked and crumbled breakfast sausage, diced tomatoes, and bell peppers in the bottom of your crockpot.
  3. Pour the egg mixture over the top and sprinkle with the shredded cheese.
  4. Cover and cook on low for 4-6 hours, or until the eggs are set and the cheese is melted.
  5. Serve the Crockpot Breakfast Tacos in warm tortillas, topped with your desired toppings like avocado, salsa, or fresh cilantro.

Notes

For a healthier twist, use egg whites instead of whole eggs, swap out the breakfast sausage for turkey sausage or plant-based alternatives, and opt for whole-wheat or low-carb tortillas.
