Description
Crockpot Chicken Piccata is a zesty, hands-off delight that transforms boneless, skinless chicken breasts into a tender, tangy masterpiece with the help of your trusty slow cooker.
Ingredients
- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup low-sodium chicken broth
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup caper berries
- 2 tablespoon olive oil
- 2 teaspoon Italian seasoning
- 1/4 cup fresh parsley, chopped
- 2 tablespoon butter
Instructions
1. Season the chicken breasts with salt, pepper, and Italian seasoning. Layer the chicken in the crockpot and add garlic, chicken broth, lemon juice, and capers. Drizzle olive oil over the top, cover, and cook on LOW for 4-5 hours or HIGH for 2-3 hours until tender.
2. Remove chicken from the crockpot and whisk butter into the cooking liquid to create a sauce. Serve over cooked pasta or rice and garnish with fresh parsley.
Notes
This dish can be customized by adding vegetables or using chicken thighs instead of breasts. Serve with roasted vegetables or a fresh salad.
