  • 4 cup broccoli florets
  • 2 cup diced potatoes
  • 1 cup chopped onion

Instructions

  1. Roughly chop the broccoli florets and place them in the bottom of your crockpot.
  2. Add the chopped onion, shredded carrots, cream cheese, and minced garlic to the crockpot.
  3. In a separate bowl, whisk the chicken broth with the nutmeg, salt, pepper, and cornstarch until smooth. Pour this mixture over the vegetables in the crockpot and stir to combine.
  4. Cover and let the soup cook on HIGH for 2-3 hours or on LOW for 6-7 hours until the broccoli is tender.
  5. For a silkier texture, use an immersion blender to blend the soup, leaving some chunks if desired.
  6. Once the broccoli is tender, reduce the heat to low and stir in the milk and shredded cheddar cheese. Allow the cheese to melt completely.
