Ingredients
- 1 pound smoked sausage, sliced into rounds
- 4 medium potatoes, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can (14.5 ounce) diced tomatoes
- 2 cup chicken broth
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
1. Lightly grease the inside of your slow cooker with nonstick spray.
2. Add the diced potatoes, chopped onion, and bell pepper to the prepared crockpot. Top with the sliced sausage rounds.
3. Pour in the can of diced tomatoes, including the juice, and the chicken broth. Sprinkle the paprika over the top, and season with salt and pepper to taste.
4. Cover the crockpot and cook on the Low setting for 6-7 hours or on High for 3-4 hours, until the potatoes are tender.
5. Gently stir the casserole before serving. Ladle into bowls and enjoy.
Notes
For healthier adjustments, use turkey or chicken sausage instead of smoked pork sausage. Increase vegetable content by adding extra bell peppers or zucchini.
