Description
Cucumber Caesar Salad is a delightful and unexpected take on the beloved Caesar salad. By swapping out the traditional romaine lettuce for crisp, cool cucumber slices, this recipe offers a refreshing and light alternative that’s perfect for hot summer days or as a palate-cleansing side dish. The creamy, garlicky Caesar dressing pairs beautifully with the crunchy cucumbers, while the addition of bacon, Parmesan cheese, and toasted breadcrumbs elevates the salad to new heights of flavor and texture.

- 2 large cucumbers, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese (plus extra for serving)

- 3 anchovy fillets, minced (or 1 tablespoon anchovy paste)
- 2 tablespoon lemon juice

Instructions
- Start by melting the butter in a small skillet over medium heat. Add the panko breadcrumbs and toast, stirring regularly, until they’re golden brown. Set the toasted breadcrumbs aside.
- In a bowl, whisk together the mayonnaise, Dijon mustard, minced garlic, anchovy fillets (or paste), lemon juice, and 2 tablespoon of Parmesan cheese. Season the dressing with salt and pepper to taste.
- Place the sliced cucumbers and cherry tomatoes in a large bowl. Add the 1/2 cup of Parmesan cheese, half of the crumbled bacon, and 2 tablespoon of the toasted breadcrumbs.
- Pour the Caesar dressing over the salad and toss everything together until it’s evenly coated. Garnish the Cucumber Caesar Salad with the remaining bacon, breadcrumbs, and extra Parmesan cheese.
Notes
Cucumber Caesar Salad not only offers a delicious twist on the classic Caesar, but it also provides a host of nutritional benefits. Cucumbers are rich in vitamins, minerals, and antioxidants, making them a fantastic addition to any salad. They’re low in calories, high in water content, and can help keep you hydrated during the warmer months. The tomatoes in this salad are also a great source of lycopene, an antioxidant that may help reduce the risk of certain cancers and heart disease.
