Description

Ingredients

  • 1 cucumber, peeled and diced
  • 1 1/2 cup cherry tomatoes, quartered
  • 8 ounce fresh mozzarella
  • 1/2 large red onion, diced (optional)

Instructions

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, dried basil, and a dash of salt and pepper. Set the marinade aside.
  2. Peel the cucumber and use a fork to scrape the skin, creating a textured pattern. Slice the cucumber thinly and dice it into bite-sized pieces. Add the diced cucumber to a medium-sized bowl.
  3. Quarter the washed cherry tomatoes and add them to the bowl with the cucumbers.
  4. If desired, thinly slice and dice the red onion. Add the onion to the bowl with the cucumbers and tomatoes.
  5. Slice the fresh mozzarella into bite-sized pieces or use pre-made pearl-sized mozzarella balls. Add the mozzarella to the bowl.
  6. Pour the prepared marinade over the vegetables and cheese, and gently mix everything together until well combined.
  7. Allow the salad to sit for 10 minutes, allowing the flavors to meld and the ingredients to become evenly coated with the dressing.
