Instructions
- In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, dried basil, and a dash of salt and pepper. Set the marinade aside.
- Peel the cucumber and use a fork to scrape the skin, creating a textured pattern. Slice the cucumber thinly and dice it into bite-sized pieces. Add the diced cucumber to a medium-sized bowl.
- Quarter the washed cherry tomatoes and add them to the bowl with the cucumbers.
- If desired, thinly slice and dice the red onion. Add the onion to the bowl with the cucumbers and tomatoes.
- Slice the fresh mozzarella into bite-sized pieces or use pre-made pearl-sized mozzarella balls. Add the mozzarella to the bowl.
- Pour the prepared marinade over the vegetables and cheese, and gently mix everything together until well combined.
- Allow the salad to sit for 10 minutes, allowing the flavors to meld and the ingredients to become evenly coated with the dressing.
