Description

  • 2 pound fresh green beans, trimmed and cut into 2-inch pieces
  • 8 slices bacon
  • 1 cup condensed cream of mushroom soup
  • 1 package dry onion soup mix
  • 1 cup milk
  • 8 ounce cream cheese, cut into cubes and softened
  • 1 cup shredded sharp cheddar cheese
  • 1 3/4 cup French fried onions
  • 1 cup coarsely crushed Ritz crackers
  • 2 tablespoon melted butter
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil, then add the trimmed and cut green beans. Cook them for 3 to 5 minutes, just until they’re tender-crisp. Drain the beans and set them aside to cool.
  2. In a large nonstick skillet, fry the bacon until it’s nice and crispy. Remove the bacon from the pan and set it aside to cool, then crumble it into bite-sized pieces.
  3. In the same skillet, add the condensed cream of mushroom soup, dry onion soup mix, and milk. Whisk the mixture until it’s smooth and creamy, then turn the heat to low. Add the softened cream cheese, stirring constantly until it’s melted and fully incorporated. Transfer this cheese sauce to a large mixing bowl.
  4. Preheat your oven to 350°F and grease a 9×13-inch baking dish. Add the cooled green beans and crumbled bacon to the cheese sauce, then stir everything together until well combined. Transfer the mixture to the prepared baking dish.
  5. In a separate bowl, mix together the French fried onions, crushed Ritz crackers, and melted butter. Sprinkle this topping evenly over the green bean casserole.
  6. Bake the casserole for 15 to 20 minutes, or until it’s hot throughout and the topping is golden brown and crispy.
  7. Let it cool for a few minutes before serving.
