Ingredients
- 6 pieces bone-in, skin-on chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 tablespoon olive oil (optional, for browning)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tablespoon all-purpose flour
- 1 tablespoon Dijon mustard (optional, for extra flavor)
- Fresh parsley, chopped (for garnish)
Instructions
1. Season the chicken thighs with salt, pepper, garlic powder, onion powder, and paprika on both sides.
2. Optional: Brown the chicken thighs in a skillet with olive oil for 4-5 minutes skin-side down until golden brown, then flip and cook for another 2 minutes.
3. Place chopped onion and minced garlic at the bottom of the crockpot and arrange the seasoned chicken thighs on top.
4. Pour chicken broth over the chicken and cover. Cook on low for 6-7 hours or on high for 3-4 hours until tender.
5. About 30 minutes before serving, remove chicken thighs and whisk together flour and heavy cream until smooth. Pour into the crockpot and stir well. Add Dijon mustard if using. Cover and cook on high for 20-30 minutes until gravy thickens.
6. Return chicken thighs to the crockpot, spoon gravy over them, and let warm through for about 5 minutes.
7. Garnish with chopped parsley and serve over mashed potatoes or rice.
