Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 cup fresh mushrooms, sliced
- 4 cup fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 2 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F and lightly grease a baking dish.
2. Sauté the sliced mushrooms in olive oil over medium heat for 5-7 minutes until golden and tender.
3. Add minced garlic and cook for 1 minute, then stir in chopped spinach and cook until wilted, about 3 minutes. Remove from heat.
4. Season the chicken breasts with salt, pepper, thyme, and oregano.
5. Place the seasoned chicken in the prepared baking dish and spread the mushroom and spinach mixture evenly over the chicken.
6. Pour heavy cream over the top, then sprinkle mozzarella and Parmesan cheeses over the entire surface.
7. Bake uncovered for 30-35 minutes until the chicken is cooked through and the cheese is melted and golden.
8. Let the bake rest for 5 minutes before serving.
Notes
For a dairy-free option, substitute heavy cream with coconut cream or unsweetened almond milk. Use non-dairy cheese alternatives if desired.
