Description

A vibrant, refreshing pasta salad that bursts with tangy feta, sweet dried cranberries, and a zesty lemon vinaigrette.


Ingredients

  • 2 cup rigatoni pasta
  • 1 cup feta cheese, crumbled
  • 1/2 cup dried cranberries

  • 1/4 cup olive oil

  • 1 teaspoon honey

Instructions

1. Begin by bringing a large pot of salted water to a boil. Add the rigatoni pasta and cook according to the package instructions until it’s al dente. Drain the pasta and rinse it under cold water to stop the cooking process. Allow the pasta to cool completely before assembling the salad.

2. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until the dressing is emulsified and well-combined.

3. In a large mixing bowl, combine the cooked and cooled rigatoni, crumbled feta, dried cranberries, chopped red onion, and fresh parsley.
