Ingredients
- 2 cup rigatoni pasta
- 1 cup feta cheese, crumbled
- 1/2 cup dried cranberries
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoon lemon juice
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Begin by bringing a large pot of salted water to a boil. Add the rigatoni pasta and cook according to the package instructions until it’s al dente. Drain the pasta and rinse it under cold water to stop the cooking process. Allow the pasta to cool completely before assembling the salad.
2. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until the dressing is emulsified and well-combined.
3. In a large mixing bowl, combine the cooked and cooled rigatoni, crumbled feta, dried cranberries, chopped red onion, and fresh parsley.
4. Pour the lemon vinaigrette over the salad ingredients and toss everything together until the pasta is evenly coated with the dressing.
5. Refrigerate the Feta & Cranberry Rigatoni Salad for at least 30 minutes to allow the flavors to meld. Serve the salad chilled as a refreshing side dish or a light, satisfying lunch.
