  • 360 ml chicken broth
  • 1 cup frozen diced onion and bell pepper blend
  • 1 bag shredded Mexican style cheese blend
  • 1 can diced tomatoes with chilies (do not drain)
  • 1 cup sour cream
  • 2 cup uncooked instant white rice
  • 4 cup shredded cooked chicken breast
  • 1 can cream of chicken soup

Instructions

1. Preheat your oven to 350°F. Lightly grease a 9×13 inch baking dish.

2. In a large bowl, combine the fajita seasoning, chicken broth, diced onion and bell pepper blend, diced tomatoes with chilies, sour cream, cream of chicken soup, and uncooked rice. Stir the mixture until it’s well blended.

3. Fold in the shredded cooked chicken, making sure it’s evenly distributed throughout the mixture.

4. Pour the casserole mixture into the prepared baking dish. Cover it with foil and bake for 30 minutes.

5. Remove the foil, sprinkle the shredded cheese evenly over the top of the casserole, and return it to the oven. Bake uncovered for another 10–15 minutes, or until the cheese is melted and bubbly.
