  • 1 1/2 pound chicken breast
  • 1 teaspoon seasoning salt
  • 16 ounce orzo pasta
  • 1 1/2 cup caramelized onions
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1/2 cup white wine
  • 3 cup chicken broth
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme
  • 1 cup shredded Gruyere cheese
  • Black pepper to taste

Instructions

  1. Cut chicken breasts into 1-inch chunks and coat with seasoning salt. In a large skillet over medium heat, add olive oil. Once hot, toss in garlic and chicken. Cook for about 5 minutes until lightly browned, then remove from the pan.
  2. If making fresh caramelized onions, use the same skillet, add olive oil and butter, toss in sliced onions and a pinch of salt. Cook over medium-low heat for 20 to 25 minutes until deeply caramelized.
  3. Deglaze the pan with white wine, add orzo pasta and cook for about 1 minute, stirring to toast slightly.
  4. Pour in chicken broth, add salt and fresh thyme. Stir to combine.
  5. Bring to a boil, then add reserved chicken pieces on top of orzo. Reduce heat, cover, and simmer for 10 minutes until orzo is tender and chicken is cooked through.
  6. Turn off heat, stir in Gruyere cheese until melted and creamy. Season with black pepper and additional fresh thyme to taste.
  7. Serve hot and enjoy.

Notes

Experiment with different cheeses like Swiss or mozzarella.

This dish reheats beautifully; store in an airtight container in the fridge for up to 4 days.

Feel free to add chopped spinach, mushrooms, or bell peppers for extra nutrition.

If you don’t have fresh thyme, substitute with 1 teaspoon of dried thyme.
