- 1 1/2 pound chicken breast
- 1 teaspoon seasoning salt
- 16 ounce orzo pasta
- 1 1/2 cup caramelized onions
- 3 cloves garlic
- 1 tablespoon olive oil
- 1/2 cup white wine
- 3 cup chicken broth
- 1 teaspoon salt
- 1 tablespoon fresh thyme
- 1 cup shredded Gruyere cheese
- Black pepper to taste
Instructions
- Cut chicken breasts into 1-inch chunks and coat with seasoning salt. In a large skillet over medium heat, add olive oil. Once hot, toss in garlic and chicken. Cook for about 5 minutes until lightly browned, then remove from the pan.
- If making fresh caramelized onions, use the same skillet, add olive oil and butter, toss in sliced onions and a pinch of salt. Cook over medium-low heat for 20 to 25 minutes until deeply caramelized.
- Deglaze the pan with white wine, add orzo pasta and cook for about 1 minute, stirring to toast slightly.
- Pour in chicken broth, add salt and fresh thyme. Stir to combine.
- Bring to a boil, then add reserved chicken pieces on top of orzo. Reduce heat, cover, and simmer for 10 minutes until orzo is tender and chicken is cooked through.
- Turn off heat, stir in Gruyere cheese until melted and creamy. Season with black pepper and additional fresh thyme to taste.
- Serve hot and enjoy.
Notes
Experiment with different cheeses like Swiss or mozzarella.
