Ingredients
- 4 cup mashed potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated parmesan cheese
- 1/4 cup chopped green onions
- 1/4 cup breadcrumbs
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 egg, beaten
- 1 cup all-purpose flour
- Vegetable oil for frying
Instructions
1. In a large bowl, combine the mashed potatoes, cheddar cheese, parmesan cheese, green onions, breadcrumbs, garlic powder, salt, and pepper. Mix everything together until well-incorporated.
2. Scoop out about 2 tablespoon of the potato mixture and gently roll it into a ball. Place the formed balls on a baking sheet and pop them in the fridge for 20-30 minutes to firm up.
3. Set up a dredging station with three shallow bowls—one filled with flour, one with the beaten egg, and one with additional breadcrumbs (for an extra crispy coating).
4. Working with one potato ball at a time, roll it in the flour, then dip it in the egg, and finally, coat it with the breadcrumbs.
5. Heat about 1-2 inches of vegetable oil in a deep skillet or pot over medium heat until it reaches 350°F. Carefully add the coated potato balls to the hot oil and fry for 2-3 minutes, turning occasionally, until they’re golden brown and crispy.
