Description

Garlic Butter Steak Bites with Zucchini is a delectable low-carb dish bursting with flavors, combining tender steak cubes seared to perfection and tossed in a mouthwatering garlic butter sauce, paired with tender zucchini noodles or diced zucchini.


Ingredients

  • 1 1/4 pound sirloin steak
  • 1 tablespoon olive oil
  • 3 tablespoon butter (divided)
  • 4 cloves garlic, minced
  • 4 medium zucchini, spiralized or diced
  • 1/4 cup beef broth
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat the steak cubes dry with a paper towel and season them generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the steak cubes in a single layer and sear for 1 to 2 minutes per side until browned. Remove the seared steak from the skillet and set it aside.
  3. Reduce the heat to medium and add 2 tablespoon of butter and the minced garlic to the skillet. Cook for about 1 minute, stirring constantly, until fragrant. Return the seared steak cubes to the skillet and toss them in the garlic butter to coat.
  4. Add the remaining 1 tablespoon of butter, beef broth, and lemon juice to the skillet. Bring to a simmer. Add the zucchini and cook for 2 to 3 minutes, tossing frequently, until just tender.
  5. Return the steak bites to the skillet and toss them with the zucchini. Sprinkle fresh parsley over the top and add red pepper flakes if using.
  6. Serve immediately while hot.
