Description
Garlic Parmesan Chicken Meatloaf is a delightful twist on a classic recipe that combines savory flavors of garlic and Parmesan cheese, creating a comforting meal.
Ingredients
- 2 pound ground chicken
- 1 cup grated Parmesan cheese
- 3/4 cup panko breadcrumbs
- 2 large eggs
- 4 garlic cloves, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried parsley
- 1/2 teaspoon fine salt
- 1/2 teaspoon ground black pepper
- 1/4 cup whole milk
- 3 tablespoon unsalted butter
- 2 garlic cloves, minced
- 1/4 cup grated Parmesan cheese
- 1 tablespoon finely chopped parsley
- Pinch of fine salt
Instructions
1. Preheat your oven to 375°F. Grease a loaf pan or line it with parchment paper.
2. In a large bowl, combine the ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, pepper, and milk. Mix all the ingredients until they are well combined.
3. Transfer the meatloaf mixture into the prepared loaf pan, shaping it into a loaf. Bake the meatloaf for 45-50 minutes or until it’s cooked through and reaches an internal temperature of 165°F.
4. While the meatloaf is baking, prepare the glaze. In a small saucepan, melt the butter over medium heat. Stir in the minced garlic, Parmesan cheese, chopped parsley, and a pinch of salt until the mixture is smooth and well-combined.
5. Once the meatloaf is cooked, pour the garlic Parmesan glaze over the top. Let the meatloaf rest for 5 minutes before slicing and serving warm.
Notes
Choose ground chicken with a higher fat content for moisture.
Adjust seasonings to your taste.
Use a meat thermometer to ensure doneness at 165°F.
The milk helps keep the meatloaf moist; add broth or water if needed.
For gluten-free and dairy-free versions, substitute panko breadcrumbs and use dairy-free Parmesan.
