Ingredients
- 2 pound boneless skinless chicken breasts
- 2 pound red potatoes, diced
- 4 cloves fresh minced garlic
- 1 teaspoon garlic powder
- 1 tablespoon Italian seasoning
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded Parmesan cheese
Instructions
1. Prepare the crockpot by spraying the inside with non-stick cooking spray.
2. Add the chopped chicken, diced potatoes, minced garlic, garlic powder, Italian seasoning, olive oil, salt, and pepper to the crockpot.
3. Gently stir the ingredients until evenly distributed.
4. Cover and cook on HIGH for 2-3 hours or on LOW for 4-6 hours until the chicken is cooked through and the potatoes are tender.
5. About 10-15 minutes before serving, sprinkle the shredded Parmesan cheese over the top and cover to let it melt.
6. Serve hot and enjoy.
Notes
This recipe can be adjusted for smaller or larger crowds by halving or doubling the ingredient amounts.
Consider using chicken thighs for more moisture and avoid overcooking to keep the chicken juicy.
