- 3 ripe bananas, mashed
- 2 large eggs
- 1/2 cup brown sugar, packed
- 1/3 cup vegetable oil or melted unsalted butter
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- 1 3/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup chopped walnuts or pecans (optional)
- 1/3 cup chopped crystallized ginger (optional)
Instructions
- Preheat oven to 350°F. Grease and line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk together the mashed bananas, eggs, brown sugar, oil or melted butter, molasses, and vanilla extract until smooth.
- In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ginger, cinnamon, nutmeg, and cloves.
- Gently fold the dry mixture into the wet ingredients, being careful not to overmix.
- If using, fold in the chopped nuts and crystallized ginger evenly throughout the batter.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick comes out clean or with moist crumbs.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For longer-term storage, wrap tightly in plastic wrap or aluminum foil and keep at room temperature for up to 3 days. Can be frozen for up to 3 months.
