Description

Gingerbread Banana Bread is a delightful twist on the classic banana bread recipe, incorporating warm spices for a delectable journey.


Ingredients

  • 3 ripe bananas, mashed
  • 2 large eggs
  • 1/2 cup brown sugar, packed
  • 1/3 cup vegetable oil or melted unsalted butter
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/3 cup chopped crystallized ginger (optional)

Instructions

  1. Preheat oven to 350°F. Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the mashed bananas, eggs, brown sugar, oil or melted butter, molasses, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ginger, cinnamon, nutmeg, and cloves.
  4. Gently fold the dry mixture into the wet ingredients, being careful not to overmix.
  5. If using, fold in the chopped nuts and crystallized ginger evenly throughout the batter.
  6. Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until a toothpick comes out clean or with moist crumbs.
  7. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For longer-term storage, wrap tightly in plastic wrap or aluminum foil and keep at room temperature for up to 3 days. Can be frozen for up to 3 months.
