Instructions

Sear the Beef:
Heat olive oil in a large skillet over medium-high heat. Add the beef tenderloin slices and sear for 2–3 minutes until browned. Remove the beef from the pan and set aside. -
Sauté the Vegetables:
In the same pan, add the chopped onion and sauté for 2 minutes. Add garlic and mushrooms and continue to cook for about 5 minutes until softened and fragrant. -
Deglaze and Simmer:
Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well, scraping up any browned bits on the bottom of the pan. Simmer for 4–5 minutes to deepen the flavor. -
Add the Creaminess:
Lower the heat and stir in the sour cream until smooth and incorporated. Return the beef to the skillet and simmer gently for another 2 minutes. Season with salt and pepper to taste. -
Serve and Garnish:
Serve hot over cooked egg noodles or rice. Garnish with chopped fresh parsley for a fresh, herby finish.
