  • 1 pound lean ground beef
  • 1 cup diced zucchini
  • 1 cup long-grain white rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounce) diced tomatoes
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon lemon juice
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare the rice according to the package instructions, then set it aside.
  2. Heat 2 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat, if needed.
  3. Add the diced onion and zucchini to the skillet. Cook for 5-6 minutes, stirring occasionally, until the vegetables have softened.
  4. Stir in the minced garlic, dried oregano, salt, and black pepper. Cook for an additional minute, allowing the flavors to bloom.
  5. Pour in the can of diced tomatoes, including the juices. Simmer for 5-7 minutes, until the mixture has slightly thickened.
  6. Remove the skillet from heat and stir in the lemon juice.
  7. Divide the cooked rice among serving bowls. Top each portion with the beef and zucchini mixture, then sprinkle with crumbled feta cheese and fresh herbs, if desired.
