- 1 cup diced zucchini
- 1 cup long-grain white rice
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounce) diced tomatoes
- 2 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoon lemon juice
- 1/2 cup crumbled feta cheese
Instructions
- Prepare the rice according to the package instructions, then set it aside.
- Heat 2 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat, if needed.
- Add the diced onion and zucchini to the skillet. Cook for 5-6 minutes, stirring occasionally, until the vegetables have softened.
- Stir in the minced garlic, dried oregano, salt, and black pepper. Cook for an additional minute, allowing the flavors to bloom.
- Pour in the can of diced tomatoes, including the juices. Simmer for 5-7 minutes, until the mixture has slightly thickened.
- Remove the skillet from heat and stir in the lemon juice.
- Divide the cooked rice among serving bowls. Top each portion with the beef and zucchini mixture, then sprinkle with crumbled feta cheese and fresh herbs, if desired.
