  • 1/2 teaspoon garlic powder

  • 4 cup broccoli florets
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cup cooked rice or quinoa

Instructions

  1. Season the chicken breasts with olive oil, paprika, garlic powder, salt, and pepper. Rub the seasoning evenly over the surface of the chicken.
  2. Preheat your grill or grill pan to medium-high heat. Cook the chicken for 5 to 7 minutes per side, or until it reaches an internal temperature of 165°F. Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes before slicing.
  3. While the chicken is cooking, toss the broccoli florets with olive oil, salt, and pepper. You can either steam the broccoli for 4 to 5 minutes until tender-crisp, or roast it in a 425°F oven for 15 minutes, stirring occasionally, until lightly charred and caramelized.
  4. In a small bowl, whisk together the mayonnaise, sour cream, minced garlic, lemon juice, Dijon mustard, salt, and pepper until the mixture is smooth and well-combined.
  5. To serve, divide the cooked rice or quinoa between serving bowls. Top with the grilled chicken slices and roasted broccoli florets. Generously drizzle the creamy garlic sauce over the top, and serve with fresh lime wedges on the side.
