Grilled Salsa Verde Pepper Jack Chicken is a flavor-packed masterpiece that combines the tangy, herbal notes of salsa verde with the melty goodness of pepper jack cheese.
Ingredients
- 2 pound boneless, skinless chicken breasts
- 1 cup salsa verde
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 8 ounce pepper jack cheese, sliced
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
Instructions
1. In a bowl, combine salsa verde, lime juice, olive oil, cumin, garlic powder, and chili powder to create the marinade.
2. Place the chicken breasts in a resealable bag or dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes or up to 4 hours.
3. Preheat the grill to medium-high heat and lightly oil the grates.
4. Remove chicken from marinade and grill for 6-7 minutes per side, or until the internal temperature reaches 165°F.
5. During the last few minutes of grilling, place two slices of pepper jack cheese on each chicken breast to melt.
6. Serve topped with extra salsa verde, diced avocado, and fresh cilantro.
Notes
Allowing the chicken to marinate longer enhances flavor. Serve with tortilla chips or grilled tortillas for a complete meal.
