  • 1 pound ground beef
  • 2 cup sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoon taco seasoning
  • 1 avocado
  • 1 cup cottage cheese
  • 1/4 cup hot honey

Instructions

  1. Preheat air fryer to 400°F or oven to 425°F.
  2. Cube sweet potatoes into bite-sized pieces and toss with olive oil, salt, pepper, and taco seasoning.
  3. Air fry sweet potato cubes for 12-16 minutes or roast in the oven for 20-25 minutes until tender and slightly crispy.
  4. While sweet potatoes are cooking, brown the ground beef in a large skillet over medium-high heat for 5-7 minutes.
  5. Once browned, add taco seasoning and stir well. Pour in 3/4 to 1 cup of water and simmer for 3-5 minutes.
