Description

Ground turkey stuffed sweet potatoes are a delectable and nutritious meal that combines the natural sweetness of baked sweet potatoes with the savory goodness of seasoned ground turkey.


Ingredients

  • 2 medium sweet potatoes
  • 2 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounce) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 can (14.5 ounce) diced tomatoes, drained
  • 1/4 cup fresh cilantro, chopped
  • 1 cup shredded cheese

Instructions

1. Preheat your oven to 400°F. Wash and pierce the sweet potatoes with a fork, then bake them directly on the oven rack for 45-50 minutes, or until they are fork-tender.

2. While the sweet potatoes are baking, heat the olive oil in a skillet over medium heat. Add the diced onions and cook for 3-4 minutes, until they become translucent. Then, add the minced garlic and cook for an additional 30 seconds.

3. Add the ground turkey to the skillet and cook, breaking it up with a spatula, until it is browned and no longer pink. Season with smoked paprika, chili powder, cumin, salt, and pepper.

4. Stir in the black beans, corn, and diced tomatoes. Simmer for 5-7 minutes.

5. When the sweet potatoes are done, remove them from the oven. Slice each potato down the center and gently mash the flesh with a fork.

6. Spoon the ground turkey mixture into each sweet potato. Top with shredded cheese and return to the oven for about 5 minutes, or until the cheese has melted.

7. Garnish with fresh chopped cilantro and serve hot.
