Ingredients
- 1 pound ground turkey
- 1 medium zucchini, diced
- 1 can (15 ounce) chickpeas, drained and rinsed
- 2 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
1. Begin by heating the olive oil in a large skillet or pan over medium heat.
2. Add the chopped onion to the hot pan and cook for 3-4 minutes, stirring occasionally, until the onion is softened. Then, stir in the minced garlic and cook for an additional minute.
3. Next, add the ground turkey to the pan, breaking it apart with a spatula as it cooks. Continue cooking the turkey for 5-7 minutes, or until it is browned and fully cooked through.
4. Once the turkey is cooked, stir in the diced zucchini, drained and rinsed chickpeas, cumin, smoked paprika, salt, and black pepper. Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender and the flavors have melded together.
5. Finally, remove the skillet from heat and sprinkle the fresh, chopped parsley over the top. Serve warm.
Notes
