Ingredients
- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup diced red onion
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/4 cup chopped fresh parsley
Instructions
1. Start by boiling the elbow macaroni in salted water until it’s cooked al dente. Drain the pasta and rinse it under cold water to stop the cooking process. Set the cooled macaroni aside.
2. In a large mixing bowl, whisk together the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until the dressing is smooth and creamy.
3. Stir in the diced red onion, celery, red bell pepper, and chopped fresh parsley into the dressing, making sure everything is evenly coated.
4. Finally, add the cooled macaroni to the bowl and gently mix until all the ingredients are well combined and the pasta is fully coated in the flavorful dressing.
5. Cover the macaroni salad and refrigerate it for at least 1 hour, allowing the flavors to meld together. When you’re ready to serve, grab a big spoon and dish up this bold and delicious creation!
Notes
Macaroni salad can spoil more quickly than other salads. It’s important to keep it chilled and consume it within 3-5 days of making it. If the salad has been left out at room temperature for more than 2 hours, it’s best to discard it.
