Ingredients

  • 1 pound frozen hashbrowns
  • 1 pound breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup diced bell peppers (optional)
  • 1/2 cup diced onions (optional)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

1. Preheat your oven to 350°F.

2. Lightly grease a 9×13-inch baking dish.

3. Spread the thawed hashbrowns in an even layer on the bottom of the prepared baking dish.

4. Sprinkle the cooked and crumbled breakfast sausage over the hashbrown layer.

5. In a bowl, mix the shredded cheddar and mozzarella cheeses, then sprinkle half of the mixture over the sausage layer.

6. In a separate bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.

7. Carefully pour the egg mixture over the layers in the baking dish.

8. Finish by sprinkling the remaining cheese mixture over the top of the casserole.

9. If desired, add the diced bell peppers and onions on top of the cheese layer.

10. Place the casserole in the preheated oven and bake for 45-50 minutes, or until set and bubbly.

11. Allow to cool for a few minutes before slicing and serving. Garnish with fresh chopped parsley, if desired.


Notes

This casserole can be prepared the night before and baked in the morning. Simply assemble, cover, and refrigerate overnight.
