Description
This healthy no added sugar pumpkin banana bread is naturally sweet from bananas and pumpkin, moist and satisfying, perfect for breakfast or snacks.
Ingredients
- 3 large ripe bananas
- 1 cup pumpkin purée (unsweetened)
- 2 eggs
- 1/3 cup coconut or olive oil
- 1 tsp vanilla extract
- 1½ cups oat or whole wheat flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- Optional: walnuts, dark chocolate chips
Instructions
1. Preheat oven to 350°F and grease a 9×5 loaf pan.
2. Mash bananas and mix with pumpkin, eggs, oil, and vanilla.
3. Whisk flour, baking soda, salt, and cinnamon in a separate bowl.
4. Combine wet and dry ingredients gently.
5. Pour batter into pan and smooth top.
6. Bake for 50–55 minutes; toothpick should come out clean.
7. Cool for 10 minutes before slicing.
Notes
Use very ripe bananas for best sweetness.
Store up to 3 days room temp, 7 days refrigerated, or freeze slices individually.
