- 2 cup rolled oats
- 1 cup mixed nuts (cashews, almonds, walnuts)
- 1/2 cup pumpkin seeds
- 1/4 cup chia seeds
- 1/4 cup flaxseeds
- 1/2 cup dried cranberries
- 1/2 cup natural peanut butter or almond butter
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat oven to 325°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, dried cranberries, cinnamon, and salt.
- In a small saucepan, gently melt the peanut butter and honey (or maple syrup) together until smooth. Stir in the vanilla extract.
- Pour the warm, wet mixture over the dry ingredients and stir until everything is evenly coated.
- Using a cookie scoop or spoon, portion the dough onto the prepared baking sheet, shaping each cookie into a round. Gently press down on the cookies to flatten them slightly.
- Bake for 12–15 minutes, or until golden brown and firm. Allow cookies to cool completely on a wire rack before serving.
Notes
These cookies can be customized for dietary needs by using gluten-free oats or plant-based nut butters.
