Ingredients

  • 2 cup rolled oats
  • 1 cup mixed nuts (cashews, almonds, walnuts)
  • 1/2 cup pumpkin seeds
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 1/2 cup dried cranberries
  • 1/2 cup natural peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 325°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, dried cranberries, cinnamon, and salt.
  3. In a small saucepan, gently melt the peanut butter and honey (or maple syrup) together until smooth. Stir in the vanilla extract.
  4. Pour the warm, wet mixture over the dry ingredients and stir until everything is evenly coated.
  5. Using a cookie scoop or spoon, portion the dough onto the prepared baking sheet, shaping each cookie into a round. Gently press down on the cookies to flatten them slightly.
  6. Bake for 12–15 minutes, or until golden brown and firm. Allow cookies to cool completely on a wire rack before serving.
