Description

Healthy Zucchini Tomato Italian Sausage Soup is a warm, comforting dish packed with essential vitamins and minerals, featuring savory Italian sausage, fresh zucchini, and juicy tomatoes.


Ingredients

  • 2 tablespoon olive oil
  • 1 pound Italian sweet sausage
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 medium carrots, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoon tomato paste
  • 2 (14.5 ounce) cans plum tomatoes, diced
  • 2 medium zucchini, chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 cup vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped

Instructions

1. Heat oil in a large soup pot over medium-high heat.

2. Add the Italian sausage and break it up as it cooks until browned.

3. Add the onion, celery, carrots, and red bell pepper. Sauté for about 4 minutes until softened.

4. Move vegetables to the sides of the pot, lower heat to medium, and add garlic, red pepper flakes, and tomato paste. Cook for 2 minutes.

5. Stir in diced plum tomatoes, zucchini, salt, pepper, vegetable broth, Parmesan cheese, basil, and oregano.

6. Bring to a simmer and cook uncovered for 10-15 minutes until vegetables are tender.

7. Remove Parmesan rinds if used and serve immediately.
