Delicious Hobo Casserole with Ground Beef: A Comforting Family Favorite

- 1 lb lean ground beef
- 1/2 cup diced yellow onion
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 2 cup thinly sliced Russet potatoes
- 1 can (10.75 ounce) condensed cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- 1/2 cup French fried onions (for topping)
- Sliced green onions or chopped parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F and lightly grease a 9×13-inch casserole dish.
- In a large skillet, cook the ground beef over medium heat for 7-10 minutes, breaking it up with a spatula until it’s nicely browned. Add the diced onion, diced bell pepper, and minced garlic. Sauté for about 5 minutes, or until the vegetables are soft and fragrant. Drain any excess grease from the skillet and season the beef mixture with salt and pepper to taste.
- In a separate bowl, combine the cream of mushroom soup and sour cream. Mix until smooth, then season with more salt and pepper.
- Layer half of the thinly sliced potatoes in the bottom of the prepared baking dish, seasoning them lightly with salt and pepper. Spoon the cooked ground beef and vegetable mixture evenly over the potato layer. Add the remaining potato slices on top if needed.
- Pour the creamy mushroom sauce over the beef and potatoes, spreading it out evenly with a spatula. Sprinkle the shredded cheddar cheese on top of the casserole.
- Cover the dish tightly with aluminum foil and bake for 30-35 minutes, or until the potatoes are tender and the top is golden brown. Remove the foil and sprinkle the French fried onions over the top. Return to the oven for an additional 5 minutes to allow the onions to get crispy.
- Let the Hobo Casserole cool for a few minutes before serving. Garnish with sliced green onions or chopped fresh parsley, if desired.
Notes
