Hobo Casserole is a classic American dish that’s been warming hearts and filling bellies for generations. This hearty, one-pan wonder combines the savory flavors of ground beef, potatoes, and creamy mushroom soup for a truly satisfying meal.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium potatoes, thinly sliced
  • 10.5 ounce cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon paprika (optional, for garnish)
  • 1 tablespoon butter, melted

Instructions

1. Preheat your oven to 375°F. Grease a 9×13-inch baking dish.

2. In a skillet, brown the ground beef with the chopped onion until the meat is fully cooked. Drain any excess fat and season the mixture with garlic powder, onion powder, salt, and pepper.

3. Spread half of the sliced potatoes in the prepared baking dish.

4. Spoon the cooked beef mixture evenly over the potatoes.

5. In a bowl, whisk together the cream of mushroom soup and milk. Pour half of the mixture over the beef.

6. Add the remaining potatoes, then pour the rest of the soup mixture over the top.

7. Sprinkle the shredded cheddar cheese evenly over the casserole. Drizzle the melted butter over the top and sprinkle with paprika, if using.

8. Cover the casserole with foil and bake for 45 minutes. Remove the foil and bake for an additional 15–20 minutes, or until the potatoes are tender and the cheese is bubbly.

9. Let the Hobo Casserole cool for 5 minutes before serving warm and comforting.

Notes

For a leaner protein option, use ground turkey or ground chicken instead of beef. Substitute the cream of mushroom soup with cream of chicken or cream of celery for different flavors.
