Ingredients

Scale
  • 8 ounces of rice noodles

  • 1 pound of flank steak, thinly sliced

  • 2 tablespoons of vegetable oil

  • 1 red bell pepper, sliced

  • 1 cup of snap peas

  • 3 green onions, chopped

  • 3 cloves of garlic, minced

  • 1 tablespoon of fresh ginger, grated

  • 1/4 cup of hoisin sauce

  • 2 tablespoons of soy sauce

  • 1 tablespoon of sesame oil

  • 1 teaspoon of red pepper flakes (optional)

  • Salt and pepper to taste

Instructions

  • Cook Noodles:
Boil rice noodles according to package instructions. Drain and set aside.

  • Sear the Beef:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the thinly sliced flank steak, season with salt and pepper, and stir-fry until browned.
Remove from skillet and set aside.

  • Stir-Fry the Veggies:
In the same skillet, heat the remaining tablespoon of oil.
Sauté garlic and ginger for about 30 seconds. Add bell pepper and snap peas and stir-fry until tender-crisp.

  • Add the Sauce:
Return the beef to the skillet. Stir in hoisin sauce, soy sauce, sesame oil, and red pepper flakes if using.
Toss to coat everything evenly in the sauce.

  • Combine with Noodles:
Add the cooked rice noodles and green onions to the skillet.
Toss everything together until heated through and combined.

  • Serve:
Plate it up and enjoy this savory, satisfying noodle bowl hot!

Notes

  • You can use sirloin or skirt steak if flank steak isn’t available—just slice it thinly.

  • For a gluten-free version, use gluten-free soy and hoisin sauces.

  • Add more veggies like mushrooms, bok choy, or shredded carrots for variety.

  • Adjust red pepper flakes based on your spice preference.

  • Leftovers store well in the fridge for up to 3 days—just reheat with a splash of water.
