Instructions

1. Preheat your oven to 350°F and line a baking sheet with parchment paper.

2. Cream together the softened unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.

3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until a soft dough forms.

4. Use a cookie scoop to portion the dough into 1-inch balls. Gently roll each ball between your palms to smooth it out, then use your fingers to elongate it into an oval shape.
