Description

Honey BBQ Chicken Rice is a delicious and easy-to-prepare dish that combines tender chicken, a sweet and smoky barbecue sauce, and fluffy rice for a satisfying meal.

Ingredients

  • Boneless, skinless chicken breasts
  • Long-grain white rice
  • Chicken broth
  • Honey
  • Barbecue sauce
  • Smoked paprika
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper
  • Sliced green onions (optional)
  • Shredded cheddar cheese (optional)

Instructions

1. Begin by heating a large skillet over medium heat and adding a tablespoon of olive oil.

2. Once the oil is shimmering, add the diced chicken and season it with the smoked paprika, garlic powder, onion powder, salt, and pepper.

3. Cook the chicken until it’s browned and cooked through, about 7-8 minutes.

4. In a small bowl, whisk together the honey and barbecue sauce.

5. Pour this flavorful mixture over the cooked chicken and let it simmer for 2-3 minutes, allowing the sauce to thicken and coat the chicken evenly.

6. While the chicken is simmering in the sauce, bring the chicken broth to a boil in a medium-sized pot.

7. Add the rice, reduce the heat to low, cover, and cook for 15 minutes or until the rice is tender and the broth has been absorbed.

8. Once the rice is cooked, fluff it with a fork and stir it directly into the skillet with the honey BBQ chicken.

9. Gently mix everything together until the rice is evenly coated in the delicious sauce.

Notes

For the best texture and flavor, opt for boneless, skinless chicken breasts.

If you prefer, you can also use boneless, skinless chicken thighs for a juicier, more tender result.

To ensure perfectly cooked rice, be sure to use long-grain white rice and follow the package instructions carefully.

Resist the temptation to lift the lid during the cooking process, as this can release valuable steam and lead to unevenly cooked grains.
