Description

Honey BBQ Chicken Rice is a one-skillet wonder that brings together the best of both worlds – juicy, saucy chicken and perfectly cooked rice. The savory chicken is seared to perfection, then simmered in a delectable honey-infused barbecue sauce. The rice soaks up all the flavorful juices, creating a harmonious blend of sweet, smoky, and savory notes in every bite.

Ingredients

Scale
  • 1 pound boneless skinless chicken breasts
  • 2 cup long-grain white rice
  • 2 cup chicken broth
  • 1/4 cup honey
  • 1/2 cup barbecue sauce
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sliced green onions (optional)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

1. 1. Begin by heating a large skillet over medium heat and adding the olive oil. Once the oil is shimmering, add the diced chicken and season it with smoked paprika, garlic powder, onion powder, salt, and pepper. Cook the chicken until it’s browned and cooked through, about 7-8 minutes.

2. 2. In a small bowl, whisk together the honey and barbecue sauce. Pour this mixture over the cooked chicken and let it simmer for 2-3 minutes, allowing the sauce to thicken and coat the chicken evenly.

3. 3. While the chicken is simmering in the sauce, bring the chicken broth to a boil in a medium-sized pot. Add the rice, reduce the heat to low, cover, and cook for 15 minutes or until the rice is tender and the broth has been absorbed.

4. 4. Once the rice is cooked, fluff it with a fork and stir it directly into the skillet with the honey BBQ chicken. Gently mix everything together until the rice is evenly coated in the sauce.

Notes

For the best texture and flavor, opt for boneless, skinless chicken breasts. This cut of chicken cooks quickly and absorbs the honey BBQ sauce beautifully. If you prefer, you can also use boneless, skinless chicken thighs for a juicier result.

To ensure perfectly cooked rice, be sure to use long-grain white rice and follow the package instructions carefully. Resist the temptation to lift the lid during the cooking process.
